One Potato, Two Potato

This is my families favorite potato dish.  We love potatos and onions.  Put the two together and you can't miss.

Below is a dish we've been having for dinner at least once, if not twice a week for the past month.  I know it sounds a little obsessive, but when you don't have much time it a great no fuss dish.


This may look like a lot of potatoes but ended up not using two of the larger ones. 
Use your favorite potatoes, (we used russett here), onions (I used one red and one large vadalia), lowry season salt, Mr. Dash (whatever flavor you like) and olive oil.  This time I diced the potatoes but I normally just slice them "really" thin.  Peel and slice the onions however you like.  Just remember the smaller the slices the quicker they cook. 

I place everything on a cookie sheet lined with aluminum foil.  Toss with the Season Salt, Mrs. Dash and olive oil.  Mix until all potatoes are covered.  cover with another sheet of foil, seal tight.  Place in a preheated 450 degree oven.  Cook for at least 30 minutes.

I'll be back soon

 I know it's been a while since I've submitted a post but I've been crazy busy.  After Tuesday things should slow down for a little bit.  I have a week off from studying so I plan on catching up on some crafts and learning how to use my new camera.  I finally bought a book specific to my Canon EOS Rebel XSi.  Hopefully I can get some good action shots of my baseball boy.  See you sometime next week.

Mother's day

This was a really nice Mother's Day.  Even though the Mother's did all the cooking we had a nice day just eating and hanging out at the house.  Little Rylee Grace was so entertaining she kept everyone laughing.

Where have I been??????

It's been forever since I've posted anything. I've been so busy trying to get through high school baseball season and finishing up my first online class towards my bachelors degree. I didn't realize how time consuming one class could be!!
Here a few new happening on Eminence Pike.
1. I got my hands on a Canon Rebel Xsi camera last week. Now I have to figure how to use it. It's addicting. Now all I can think about is getting more lenses for it. I'll post some pics soon.
2. Celebrated my oldest graduating from Univeristy of Kentucky with Bachelors of Arts degree in Sociology. What she's going to do with her life has yet to be determined but at least she'll have a degree. Right?
3. Brought daughter no. 2 home from college with all of her "stuff".  Stuff that's still piled up in daughter no.1 bedroom. My baby daddy is about to have a coronary because she isn't making any effort to put anything away.
4. Celebrated a wonderful Mother's day with my family. We tooks some pretty good pics and was entertained by the youngest member of our family, Rylee Grace. She's a hoot and her mom has a blog. Check her out here.
5. I've finished some crafts that I've seen on other sites. I'll post those later too.
